If I book a return flight with Emirates for May. Is there any scope, apart from insurance, I don't trust insurance companies, if I have to cancel the flight? Also, what about changing my return flight for one a few weeks later?

If I do, can I change my flight at the airport or do I have to do it with getting in touch with Emirates themselves?

To obtain a changeable/refundable ticket, it's best to buy directly from the Emirates website. That way you can check the ticketing conditions before purchase.

Unless you purchase a Flex Plus ticket, you'll need to pay to change dates or to obtain a refund.

I have changed and/or cancelled Emirates flights many times. Never any problem, just call them. Be aware that if changing a flight you'll pay not only the change fee but also any difference in fare applicable for the new flight.

They're rarer than hen's teeth but if you were to book an Economy Special Fare there are no refunds allowed. Other fare types as above.

If you booked directly with Emirates it can be done online under Manage your Booking.
