Thai tomatoes are for sh*t. They look coloured artificially and many green. Not for me. Jersey beefsteaks are my go-to when I'm there.

Sundried Tomatoes....Keep for ages and taste just like fresh tomatoes........

Throw some in a food processor....

Add.

Vinigar

sugar

salt

Olive oil.

a little chili pepper

a little onion

a little herb like Oregano

Some water

Blend 1 -2 minutes...

Finished

I'll have to check the ingredients. I usually buy Fiamma crushed, if I can find them, in a gallon can. I make 5 litres at a time. Tons of vegetables. Eggplant, zucchini, celery, cherry tomatoes, mushrooms, fresh holy basil, organic oregano, bay leaves. Fry red onions & garlic, then add in spices and veg last cut to your preferred size, hard to softer. They'll cook down in the sauce. Although I haven't found any extra vigins recently, that's the olive oil I use in my gravy. I'm a vegetable so I add tinned chickpeas for protein.

Is calling it "gravy" a Jersey thing.

Good tips on here. Gotta try those tinned cherry tomatoes and even Aro sauce, depending on no sugar, no MSG, no preservatives.

BTW, if you're after real NY pizza, Chef Bing, Ruam Rudee Soi 2.

The only stuff for pasta is olive oil, fresh sweet basil, garlic, mac nuts (or whatever), and a few slices of tomato.

We have no problems finding good tomatoes in cm. NST probably has the best tomatoes we’ve had here, more iron in the red soil down there and better climate.

Southern region of NST (Nakhon Si Thammarat) and Trang has iron rich soil which is good for better tasting tomatoes and other fruits and vegetables.

Wife in from Chandii, right next door. There's a wonderful Thung Song egg pastry, with the flakiest crust! (I should know, I've been called a flake!)

If you have a branch of Kopi from theb provincial capital with their amazing patongko, there's no better place to live, Nova!

Realistically, I'm not going to make a 170 km round trip drive to buy tomatoes. And like others have said, most tomatoes I've come across in Thailand are jut sut (tasteless). I haven't had a good tomato since my last trip to the US 18 years ago. Fresh tomatoes are out, and even if I could get them, cooking them down is more work than I'm interested in pursuing - hence - why I'm looking for quality canned tomatoes. I do like making and eating Italian sauces, but I imagine that I can get stocks that are closer to the Italian restaurant varieties that I got in the Italians areas of NW Washington State back in the day. There were some great Italian restaurants in Tacoma and Seattle back when I lived there.

For those suggestion "Prego" and the like. Really - you gotta be kidding? Why not Chef Boyardee <gag>. Maybe back when I was young and in uni and both drunk and stoned. Maybe.

That's been my substitute since Lego's pasta sauces are getting scarcer than hens teeth on supermarket shelves.

Every once in a while, when they're in season, I have found the beefsteak toms at Tops to be excellent in taste and texture. Yes, smaller than what you're getting in Joyzie, but bigger than the regular Thai toms.

Sarducci's in Bellingham had a pasta sauce table for you to choose. As I recall, you could eat as much pasta as you could hold!

If you're flying back from NST, you have to try Kopi. Makes coffee anywhere else look sad. Morning pathongko is the lightest and least oily I've ever had.

Before you leave Thung Song, even though you don't eat pastry, find just one of those local specialties. Flat on one side, scalloped on the curved side. They'll change your mind (and blow you mind!).

I don't use canned tomatoes. I use fresh. The results are so much better.
