Does anyone know if you can do this ?

I have a double entry tourist visa, have stayed for about 45 days and then i am going to Cambodia for a week.

Then back into to Thailand where i was just going to start the 2nd entry on my visa.

I now have to go to Hong Kong approx 3 or 4 days after getting back from Cambodia. I dont really want to waste a 60 day visa for a 3 day stay so i was wondering if when i come back from cambodia whether i could get the visa exemption for 30 days, then go to Hong Kong and then when i come back from Hong Kong i could use the 2nd part of my visa ?

Or failing that, is it possible to change a double entry visa into a triple entry at a local immigration office ?

Cheers, any help very much appreciated

You can only ask if they will be willing to do so. Sometimes yes and sometimes no. You can not change it to a 3 entry.

As far as I know you can get a re entry permit from Immigration that will keep you second 60 day visa active. Cost 1000 Baht.

Seeing as Lopburi nether mentioned it I may be wrong.

He can do that but then you have the options of first entry/second entry/both and if done first entry the original question becomes mute. As already 45 days of the 60 will have gone and the trip/second trip will probably put him at or over 60 days it should probably be reserved to use if he is required to enter from Laos using second visa entry - to keep that one alive for the Hong Kong trip. The re-entry permit keeps your current permitted to stay until date alive and when you return that date is again stamped into your passport. You would also be able to obtain the normal 30 day extension of stay this way. You must obtain prior to making your travel.
