I lived in Thailand for a couple of years on a retirement visa than came back to the states last December (2006) and let my retirement visa lapse.

My Thai wife and I are going back for a couple of months in Feb (Feb 12 - Mar 30) I'm planning on applying fr a 60 day tourist visa and then an extention once there. It looks like we will be leaving Thailand at least once since we plan to do some travel outside Thailand as well.

Is this the best option for me? 60 tourist with one extension or is there something I'm missing?

If you plan travel a two entry tourist visa would probably be better. Any visa entry ends on departure and could not then be extended. I guess the dates you provide is your entry (not sure yet?) as they do not cover even 2 months.
