I have a one year Multiple Entry Non Imm-B that expires on May 22 but because of a visa run I have an immigration stamp till August.

I'm flying back to the states on May 30th...is that considered an overstay? or does the stamp date supercede the visa date?

The visa (issued by the Ministry of Foreign Affairs) enabled you to get into the country with a 90-day entry permit - issued by Immigration. While you are inside Thailand, the visa is meaningless. What matters is the entry permit. It gives you authority to stay until August. So - you are fine.
