I'd add that EVA could be a good choice for your elderly mum as it flies at 9:30 at night so the airport isn't quite as busy and means you can get a good sleep on the plane before arriving at about 3:30 in the afternoon Thai time.

Economy seats have personal controlable video screens as well if her eyesight isn't up to squinting at a communal screen
