Cuban Posted June 4, 2008 Share Posted June 4, 2008 The local Thai markets around Pattaya sell a rack of pork ribs for about 300 Baht. They make a great basis for a BBQ meal - we've settled on a simple sauce made from diced garlic and bottled oyster sauce, fantastic. My question for the TV foodies out there is; I have noticed that in the food markets upcountry that the racks of ribs are sold with what I assume is the back bone still attached. Is there any food safety issue that I should consider when buying such cuts of meat? My cooking of meat is almost always to the point where the fresh falls away from the bone, only fresh beef steaks might I consume cooked rare.
