My application for a job fell through and I'm only a few weeks away from expiry of my ED visa. Is it a simple process to extend this visa for 60 days based on the above clause in the police order for visa extensions? (I have a Thai son). These 60 days will give me a little breathing space to plan my next move:)

Yes as long as documents are available.

1. Application form

2. Copy of applicant’s passport

3. Copy of census registration ((home register-blue book))

4. Copy of the Thai national’s ID Card

5. Copy of marriage certificate or birth

certificate

OK except for 3 and 4. My son is only 2 years old, so has no Thai ID card yet and does not appear (I don't think) on the house book. I am named as the father on his birth certificate.
