To Fix The Future Date Of Visa Termination In Advance?

I have just lost my job here but my company are relaxed about what date they say is my official leaving date for the Thai immigration (paid up until end of month) and wondering if I take down a letter dated end of the year, then they will stamp 31st Dec as my last date in which to leave the country even though I will go to immigration tomorrow rather than on the 31st December? I am asking this just because I was hoping to travel for Christmas and won't be in Bangkok at end of year if things go to plan and so unable to head down to immigration....However, if this isn't possible then I had better get the company to say my last day is next MOnday and I will change plans to head over to Laos and still be back for New Year....I don't want to pay fines. I also heard that you can buy 7day extension to add to last day, allowing me to stay first week of Jan if can get 31st Dec termination.

You don't have to go to immigration and inform them. When your employer notifies the labour department they will most likely notify immigration. Also you do not have to turn in your work permit any more.

So just work out what ever day you want with your employer.
