I hate to admit it, but me too. :o

i know it is still a ways off.... but i grew up working in mexican restaurants (i am mexican) and have many a family receipe on hand. Additionally, my thai wife of 7 years has learned to make dynamite mexican food here in SFO and SoCal - better than me! She loves the stuff.

to get to the story... we retire to CM in August and while i won't have a work visa, she is thai and making a small business (think american catering model) out of primo mexican food, has definitely come into my mind. I, of course, would do NO work, only offer my free services as a taster.

I hope it all comes true - i know for sure she will be cooking for me and her large thai family.... so we should be able to ramp up some production fairly quickly.

I have tamales at Tacos & Salsa

A Mexican lady make them for me and i have them as a special on the beginning, but only a Filipino group of friends ask fro them. So if you want I can have them available again, to make them and have them is not a problem, the problem is to have enough costumers to buy them, other wise we have to keep them in the freezer for to long.

I am planing to do some thing for the "5 de Mayo", may be "Pozole" and "Tamales" (beef, pork, chicken and sweeten)

That is great news......I can't wait to try your tamales and enchiladas w/ refried beans and rice.

I thought you could freeze tamales for months and they still taste fine.

Anyway, I think once the word gets out you will have no problem selling them (great item for parties).

I hope you can figure out a way to make tamales for Thais too.

As an aside, I am growing Mexican peppers and some American peppers. My poblano plant never produced chiles. But an Annaheim did.......I used it to make chile relleno and my Thai wife said it was delicious.

Stuff them with cheese and pork/chicken/beef.......use whipped egg white only as cover......lightly dust with flour......fry them up.......Thais will eat them.

Just an idea.........

Just a point of information, Tamales in Chicago.

28.1% of Chicago's population is Hispanic, Chicago has the 2nd highest population of Mexican Americans in the U.S. ,only Los Angeles California has a larger Mexican- American population.

I have eaten quite a bit of tamales in Chicago and Kansas City, where I have a large contingent of my family

That came to the US during the Mexican Civil war in the early 1900s.

My family worked on the Railroads that were concentrated in those two cities.

Thais eat Mexican food, My mother-in-law love Fijoles de la hoya, Before I started making my own Masa, I made tamales out of Sticky rice, Chile con Carne or Green Chile and cheese. My Thai family and friend loved them, I put quite a bit of phrik in the Khao-niao and wrapped them in banana leaves for steaming.

My family also eats Sopa de Arroz (Mexican rice) and bean tostadas, can not keep that rice in my house as my Thai family eats it all.

The food needs to be highly spiced before the Thai's will try it, actually it is not Mexican food but they eat my homemade Pickled Pigs Feet that is extremely spicy as I put a lot of chile in it.
