I have a non-immigrant o visa and am admitted to stay here until 29 dec. My yearly income is more than 800,000 baht so I want to go "the retirement way". I am 61 years old and retired since last month. But where do I choose that? Is it where (on TM7) they ask for reason(s) for extension? The reason I want to make the extension is that I want to live here with my Thai wife, but should I write "retirement" instead?

I have noticed that one should apply at least 21 days ahead of admitted to stay date, 8 dec. in my case, so what would happen if I should come one or a couple of days after that? (Though I will go there (Sakon Nakho) on tuesday, as I understand it is closed tomorrow) I live in Kalasin.

1. You obtain letter of income from your Embassy and do the extension of stay - they are happy that you do the retirement rather than marriage so that is not an issue.

2. There is no 21 day requirement (that is for visa change) - you can apply on last day if need-be. But best to do a week or two early.

3. Yes write retirement on the TM.7

Even though depending 100% on income I think you will also need a copy of your Thai bank account book with a letter from the bank confirming the up to date balance.

That is not a normal immigration requirement, but Chonburi immigration (I see you are from Pattaya) does do things differently as discussed in other threads.
