I was only given a one entry tourist visa for Thailand (not the two entry I asked for) - So I decided to visit Australia.

I have an eVisitor pass for Australia (which was free, and issued very quickly).

Do I need to present an outbound ticket when I arrive in Australia? I can't find anything about this in the conditions.

There are two possible dates on which I might leave - and I just want to save myself a flight re-booking fee if I can. So ideally, I want to buy my outbound flight ticket once in Australia.

As long as you have enough cash to support your stay and also to buy an outwards ticket you wouldn't be refused entry.

The chances of even being asked for an outwards ticket are slim unless you come to attention for other reasons.

What kind of reason could draw attention to me? For four years, I was a temporary resident of Australia (457 Independent Executive Visa). Also, technically, I'm a director of an Australian company - although my interests moved onto other projects after I left, and the company doesn't do anything nowadays. Could my links to Australia draw attention to me?

Are you saying that technically - I should have an outbound ticket? Or is proof of wealth adequate?

I may seem cautious - but I once had an awkward problem flying from Australia to New Zealand. I had an outbound ticket from NZ - but I had no visa yet for the country I was flying to after NZ. I was tripped up by NZ visa regulations, not Australian - but it was strictly enforced at the Australian end by people who were sticklers for rules and regulations.

A breach of Customs regulations or bizzare behavier in the arrivals hall, could draw attention, not your former work history, unless it was something illegal.

Some airline check-in staff may ask about an outwards ticket (or visas) as the airlines could lose money if they had to return you to point of origin. Adequate funds should keep them happy.
