Anyone ever eaten Gaeng Khai Pam? i eat it in Bamn Pong Ratchaburi at my Mother in law's it is made from the green algae that floats on the still water in lakes, pools and slow flowing streams...green as an alien's skin, but it is lovely!

Gaeng Khai Phum -แกงไข่ผำ - I have never tried before

The green thing is Algae Wolffia globosa Hartog (Water Meal, Swamp Algae)

North call - ผำ Phum

Central -ไข่น้ำ Khai Num

Isaan call -ไข่ผำ Kai Phum

Many years ago an American company hired me to research the culinary uses of pham in Thailand. I spent a week or so exploring the markets of Chiang Mai and asking people how they generally cooked the stuff. The most common way (back then anyway) was to stir-fry it with garlic, black pepper and dried red chilli flakes/powder.

The company hoped to market pham alongside spirulina. I was told that Thai pham was similar but more nutritious than spirulina.

It's similar to some varieties of duckweed in N America.

I have never seen this stuff in any Thai fresh market or restaurant. Looks extremely healthy, so long as it is not heated.

Does anyone know where to buy? Or eateries where it is served? Thanks.

Fresh markets in Chiang Mai sell it, eg, Talat Thanin.

I lov to know how it tastes. Any comparisions? Also have to say it doesn't look very tasty, or is that just the website?

Just curious, what was your position, type of company?

I have a Bachelor's in Culinary Arts and am looking for work in something along these lines
