My passport expires in 4 months. I want to do a couple of visa runs for 30 day visa on arrivals before heading home.

I have already bought a ticket with AirAsia for a roundtrip to Rangoon, Myanmar at the end of the month. Would there be any problems? Canadian passport here.

Before going to Rangoon, I was planning on buying another roundtrip ticket with AirAsia for another 30 days and then a ticket back home. So I'll have proof of onwards travel in all cases before I leave thailand.

Will this be fine?

No it will not be OK if they follow requirements as you do not have six months remaining on your passport validity. Believe Hong Kong accepts less but not Burma.
