I will be travelling for two months through Thailand and pretty much all of SE Asia as well (Vietnam,Laos,Cambodia) over December - January.

My question is will I be always guaranteed to get some form of accommodation if I dont pre-book ? My fear is basically that I rock up to a place and find everything is booked out !

Will be backpacking, so quality is not really an issue.

It does get very full in some of the hotspots - I was in Bali during NY 2 years ago and we flew in w'out any hotel reservations - it was very hard to find somewhere that didn't include daft dinner charges on the night itself - but we did find somewhere.

There are always the short time hotels......you do not have to share if you do not want to.
