Does anyone know where I can find Goose or Duck fat in Bangkok. I have tried Villa and Foodland but no luck.

My only guess would be one of the supermarkets to be found in:

Emporium (Gourmet Market)

CentralWorld (Central Food/TOPS)

Siam Paragon (Gourmet Market)

We have looked in Villa, Foodland, TOPS and Makro. No go. I think that one of these 3 is your best answer. Good luck, at least all the stores are open on Christmas Day ;)

Just for future info, we eat duck once or twice a month at home so I save all the fat for this one specific purpose.

Indeed, duck is about the only meat that one should cook starting with a cold pan.

Put some duck breasts skin side down in a cool pan. Put the pan on a medium heat. The fat should render down. Pour the fat into a bowl and store in the fridge. Great for roast potatoes.

Makro carries duck skin, frozen, by the kilo. Cheap!

I render it slowly, then give the crispy skin to my dog if he bothers to come when I call him. So, usually I use it as a topping on duck guaydeow.

Anyways, from each bag rendered, I probably get close to a liter in pure fat. Lasts forever. Oustanding for frying potatoes. I also use it (or bacon grease) to cook khao pad. Blows Thais away!
