So my travel insurance ran out a couple of months ago and I really need to get something in place. From my experience though, insurance companies require you to take out the cover before leaving your home country.. Is this correct? I'm not going to be going back to the UK for a few months and don't feel particularly safe being uninsured so if anyone can give me some guidance on this it would be much appreciated!

This is somewhat correct. There are exceptions, though. You just have to find them (go googling?)

I have bupa from a local reseller/agent and I paid 21 000 per annum as a 29 year old which provides the second to top level of bupa coverage.
