My wife and I have Non Immigrant "B" visas with two journeys. Once we arrive to Pattaya, can we go to immigration and buy multible exit forms so if needed, we can leave and return on this?

Are you sure that is what you have? Very unusual for B non immigrant visa to be issued in anything but single entry or multi valid for one year.

You can obtain a re-entry permit on any valid visa entry which allows you to return during that time period for the remainder of the period. Cost is 1,000 baht and can be obtained at any immigration office.
