10 minute Jam (using agar-agar). You gotta try this!!
Agar-Agar is a powdered gelatin like substance, called Kanten in Japan, it is 8 times stronger than gelatin and vegan friendly. Today I whipped up two batches of Jam with it and I can't believe how easy it was. Get a hold of some of this stuff and give it a go.

Recipe
Fruit
Sugar 1/2 the weight of the fruit
Agar 1/2 tsp per 500g of fruit

prepare fruit as usual, hull, cut, smoosh whatever! put the sugar in, cover it and stand overnight. In the morning drain the juice off to a saucepan. Boil that juice for 5 min, add fruit, boil for another 4mins, then add agar powder, and finish by boiling for another minute. Jar it up, done! It should keep for 2 months, maybe more in the fridge. No more jamsetta, or over sugary jam, the flavor of the fruit really comes through, so make sure you use nice ripe fruit. Fruit with low pectin, no problem, I made a batch with Mulberries today, set like a rock!!!

Agar-Agar is available everywhere here, even Tesco.

If you've whipped up a batch, lets know how you went on. I have tried the mulberry, tastes sensational, but could be a little more liquid, will adjust that in the next batch by bumping a bit more water in.
