I'm planning a road trip from Chiang Mai to Bangkok next week. Along the way, we'll stop by Lampang, Lamphun, Sukhothai, Lop Buri, Phitsanulok.

I was told there's traffic jam around this time. Is that true?

Yes its true but if you leave after Monday January 5 you should be OK. Stay off the highways until then.
