More seriously, you might want to post where you are based.

Also, there's no such thing as Chinese food. It's very regional. Do you want to learn Cantonese? Or Szechuan? Or Shandong? Or Hunan? Or Fujian cooking? They're all very different.

I think he wants you to be more specific, its no good suggesting a course in Chiang Mai if you live in Phuket?

I'm guessing you haven't travelled very much. Chinese restaurant (or takeaway) food in England is very different from that in Spain or America or Cyprus or Thailand (all of which I've experienced). And all of them are very different from Chinese food in China. For example, "special fried rice" in London is a dry dish with rice stir fried with small pieces of meat, prawns, vegetables and egg. In Madrid it's fried rice topped with gravy with anonymous lumps of meat therein.

So no, I don't know what you mean. If you want to learn how to cook genuine Chinese food you need to specify which cuisine.

And if you want to learn what passes for Chinese food in your home country, you're not going to learn how to make it here. Chinese food (as with many other cuisines) mutates once it leaves its home to satisfy local tastes. After all, the restaurant's priority is to make a profit, not serve unpalatable, authentic cuisine.

If you're Australian, search for videos by Kylie Kwong. If you're British, search for videos by Ken Hom or Ching-He Huang (though neither will teach you how to make disgusting, deep fried pork dough balls served with fluorescent pink sauce or vile, greasy, monster-sized spring rolls - both staples of British Chinese restaurants). And for Singapore-Chinese, Nancy Lam.
