You will need paperwork from the organisation you are volunteering with which will support an application for a single entry 90 day "O" visa based on volunteering.

The visa will have to be applied for at a Thai Embassy/Consulate outside Thailand

The organisation you will be working with is responsible for applying for a work permit.

All the well established NGO's are aware of what is required.
