What is in those tofu tubes?

250 gram  99% tofu blocks are about 23 baht at Big C. There are also 220 gram 40% tofu tubes for 7-10 baht, no writing about the other 60%. These are the white (non-egg) tubes.

 

Is the rest just water? The nutrition numbers seem pretty similar to the blocks with about 5g protein, 2.5g fat and 2g carbs per 100 grams

Different softness is just different amount of water that is pressed out

Yep, it's a matter of how much water  it contains.
