Can my Thai wife 'hire' me and transfer me 45,000 a month into my Thai bank account and use that paper trail as proof of income?

Or is it better for me to have a Canadian friend 'hire' me and transfer the funds into my Canadian account?

Or are some sort of tax documents required other than just bank statements and invoices?

The only proof of income accepted by immigration is a statutory declaration done at the Canadian embassy. They want back up proof when you do the declaration. Not sure what the want for the proof.

If you were legally working here with a work permit immigration would accept tax payments receipts as proof of the income.

Yes to both. The money will have to be in the bank for 2 months on the date you apply for extension.
