Following Ubonjoe's advice I applied for the stamp by post and the income letter was mailed by return with the stamp. I followed the instructions - Link is www.consular.go.th/main/th/services/1303/24762 - which are in English and very clear. Note you don't need to translate the letter if it is in English. I enclosed a money order as requested for 400 baht + 60 baht for EMS post as requested and they sent me back 200 baht!! An excellent service avoiding the hassle of going to Chaeng Wattana in person.

Thanks again Joe for your excellent advice.

Which immigration office are we talking about here that requires an Embassy income confirmation letter/affidavit to be notarised by the MFA?

FYI – Rai Khing IO (Nakhon Pathom) located on the Western outskirts of BKK is one of the offices insisting that embassy letters confirming income/pension are authenticated by MFA Consular Division.

When I did my extension based on retirement last week at Rai Khing the IO never looked at the reverse of the embassy letter to see if the MFA authentication stamp was present.  A case of when the IO says jump, don’t ask how high, just jump and hope that its high enough .
