“Most” is not all... As I stated in my post if you take and have a photo of the completed arrival card on the plane there would be no doubt whatsoever... 

If I were you I would rent a big bike in Chiang Mai (Many places on east side of moat)... for a month and then go live in Pai... You can find nice places for a month on AirBnB... Pai is a nice mix of countryside with close proximity to western resources and nomads such as yourself...

We just did Halong Bay over Xmas... I wish we had a direct flight (Had to connect thru Don Mueang and immigration was a pain upon returning - Luckily I paid for express lane service and walked right past the thousand or so Chinese "queued" up... ;-))... 

Also there are websites where you can arrange prepay for visas ahead of time - Opt for the deluxe where a guy meets you just before the visa desk and handles the immigration queue & everything while you sit and wait (10 minutes)

But you can keep an eye out on the following forum as a few failed Hostel businesses come up for sale (not the building)... You can buy them out and take over the rent... To protect yourself have any long term lease (+ 3years) registered with the land department...

This woman Requires you to buy her entire package of learning materials up front for a few thousand baht... She also makes you sign contract that mainly say - No Refunds...  This should cause you to take pause....

Very near there is Wat Nam Bo Tib which is a beautiful Wat 

Also most of these cams have a function that is a motion sensor so if it senses a jolt (like in an accident) it lock saves that video... But in use just about any jolt (like a pothole) will trigger it - this eventually fills the memory card - I just turned this function off - in the event of a real accident I would remove the card and keep it safe (I would not give it to anyone until I had made a copy)...

Also you mentioned the Uber driver had a popular rear facing camera... my bet is that is to record the passenger not any potential

traffic accident from behind ;-)

before you you buy any model search for it in YouTube to see examples of image quality and field of view

^^^ We have had it in the car for over a year no problem... The cable it comes with was long enough to hide it around the door seal and under the dash to where I have a multi cigarette plug hidden (I have a GPS and USB adapter also plugged into the multi-plug under the dash)...

Its a great piece of kit... The only drawback it the cam itself is in Chinese (Most all of these are including your mirror types)... But the App you download from Apple or Google is all English so you never have to fool around with those tiny buttons on the device itself... Another nice feature is that you can view all the recording on your smartphone and download any videos to your phone
