You're right about halibut but salmon here in Thailand is doable. I'm not a fish expert but regularly eat salmon from Makro. I've had some soggy fried fish I think was dory, they come in huge pieces which makes bad finger food and what's with mushy peas.

Wouldn't a fish with more solid meat like halibut or salmon make a better choice for fried fish. I had it once in Canada for Pub Grub, to die for.
