  1. Everybody accuses the BBC (news) of being biased against them. What they always do is toe the line of the current government to a large extent. This can be amplified by the political leanings of whomever is presented/ wrote the report. But at their core they are an organ of government propaganda. For a long time I have found BBC News coverage to be selective. For a recent example, how long was the current slaughter in Sudan going on before it began to be reported on? How goes it in Yemen? Syria? How do they justify repeating the same stories hour after hour while ignoring completely other stories?

  9. Getting it into THB is not so straightforward (cheap) due to capital controls. I for one am very sensitive to currency conversion spread and any commission or other charges.

We cook the offal in a large pot of water, allow it to cool then slice it up, bag portions with some of the "soup" and freeze. It costs us about THB 30/ kg. Anyway, I get bored doing the same thing over and over, so I always look for a way to speed it up. The above slicer looks like it might help, but I have no experience using such a thing. Maybe it's better at raw than cooked. Maybe some type of organ slices nicely but others do not etc. I've seen contraptions that look like paper guillotines, but that is not much different than using a knife. I don't want to shell out for something with a motor attached as that costs way more.

  12. I have plenty of filters for my Aeropress and my 58.1mm portafilter (I use a metal screen these days). With filters, I worry about the change in mouth feel, but I think I'd rather have not have the bowels-triggering sediment. I'll try a filter next tme I feel the urge to brew some mocha. Cheers!

  14. Apart from not using a filter, this is the method I use when making mocha in my Bialetti. Pre-boiling the water saves a lot of time. Don't forget to use a cloth or towel when screwing the base to the top though. I reduce heat and return/ remove the pot to try to keep a smooth flow of coffee without sputtering. I think I got the basic idea from "The Wired Gourmet" on YT.
