Looking for suggestions for the best visa for long term stay. I'm already in Thailand so I'd like to go to a neighboring country and not my home country to apply.

Can I get a Non O which will mean I only have to leave every 3 months?

You can not obtain a non immigrant O visa without going further afield. You can use tourist visas until they say no more (which may never happen but could). Going to Cambodia every month will only be allowed for 3 months and then you will need a real visa.
