Overstay

You can`t get away with an overstay of more than 90 days without a ban. Up until 90 days, you can pay the fine 500 bath/day, up to maximum 20.000 bath, if paid at the airport/border on your way out. If caught before that, as others point out, you are in deep trouble, and get to be locked up at IDC in Bangkok. And anyone should avoid that prison at all costs.

There is not grace period for anything at immigration.

After a permit to stay ends a person is on an overstay. If a person qualifies for an extension the may allow the application to done with a few days of overstay after they pay the fine.

This is at the discretion of the immigration office. Usually, they will allow you to pay the fine and be issued an extension (starting from the end of the original permission to stay) if the overstay is less than one week.
