You can buy fresh bamboo spouts at any local fresh market.  Once you eat fresh you'll never want to go back to eating canned cardboard. 

Yes, agree. Fresh bamboo shoots can be found at the local fresh market or at a grocery store. I just checked and Tesco Lotus has bamboo shoots in a brine, but it is in a plastic bag. I think I have seen them in a jar too.
 

Not sure where to find water chestnuts, but most likely you can find it fresh too.

 

Also, you might be interested to know that cloud ear fungus can be found at the local fresh markets.

 

 

Water chestnuts at Rimping..possibly Big C-Tesco--Tops as backup     Sub Nor Mai! Bamboo salad!!!

I saw a huge pack of fresh water chestnuts a few weeks ago in Makro. They were in a vacuum-sealed plastic bag.

Isn't that the truth!  At our house in the U.S, we have a small grove in the yard.  My wife has scouted out other nearby sources as well.  We only get them in the spring.  There was one day we filled the back of my Toyota pickup full to the brim from one place alone.
