It's been a few years and I can't find the visa company I used for Vietnam. Outside of the official gov. website does anyone have any recommendations? (US citizen)

I would recommend trying the official site if you haven't done so.   It's relatively easy to use.  I just got an Evisa there and it took just a few minutes to submit my application.  The only problem I had was that it will only accept small file sizes for the required photos.  Once I figured that out, and reduced the photo file size, the rest was simple.

Thanks -Yes, the gov. Website is the best, but because of my timeline I used a service (not sure if I can name the co. so I won't.). Yes, I paid 2x as much, but I rec. the paper in 2 days, and it has a personal touch for future ventures.
