I’m using a builder to build a house for me. Now that there is electricity and water, the workers have moved into the house and use the showers and toilets, etc while they live cook and sleep in the different rooms. Is this normal?

Absolutely NOT normal.

 

As Crossy showed above, it is nearer to the norm.

 

My builders built a bamboo and straw roof "hong noi" in the grounds to shade under and eat food etc. They also dug a pit as a makeshift loo in one corner.. They travelled back and forth every day; no one was left on the premises after 5 pm.

No.  It is not normal.

 

As mentioned/shown above if they have workers that need to live on site they will set up temporary shelters to use.

Some builders send crews from site to site across the country and they stay on the site.  Other companies will have local workers that are only there while working.
