PS. Build a small wall between the bottom drum and your legs...otherwise you'll get some great BBQ tattoos.

I have seen similar websites with trashcan smokers but I'm not sure if metal trashcans are available in Bangkok, I don't remember seeing them in Home Pro.

However, it should be possible to find something that would work just as well.

Got another question, where would you find an appropriate usable wood for this? Any suggestions on what thai wood can be used?

1. The best idea I have heard is to use lam yai wood for smoking -- the local charcoal is mostly made from rubber wood.

2. This website has a lot of ideas for smokers and technique: http://sausagemaker.com/MeatSmokers.html -- could probably have a smoker made here in Thailand by one of those restaurant/food cart fabricators -- even in stainless steel with a gas heat ring.

3. My (here-to-fore secret) plan if I had the space was to make a REAL BBQ (for the 15 hour pork shoulders) out of 2 large upended concrete sewer conduits. -- One for the fire box down low and one for the BBQ smoker elevated connected by a dampered pipe -- and every town in LOS has those conduits available.

The garbage can or oil drum offers no insulation to keep the temperature steady and the fire burning longer -- just might have to add some fire brick or lining to the fire box

4. look at the 'BIG pit' here: http://www.coopersbbq.com/tour.asp to see a pit with an 'above' lid as opposed to the door on the drum design

5. Make the BBQ sauce out of mustard & vinegar like they do in the Carolinas instead of catsup (Hi Jet!)
