With regards to the first one I was told that Din Prasiew was Potassium nitrate, which believe it or not I was able to buy in the local fresh food market. Potassium nitrate is not as stable to use as Sodium Nitrite in curing foods as the temperature is far more critical when using Potassium nitrate. However, if you want Sodium Nitrite indded (and Sodium Erythorbate) , you can buy it at http://www.suksapan.or.th/ (Thai language) Suksapan panish shop is located near the Democracy Monument. You may ask them for "Sodium Nitrite " instead of using the word "Din Prasiew".
