If your passport is stamped for 30 days does that mean you could actually leave on the 30th day, or do you have to leave on the 29th or before?

If I arrive at 1 am on Jan 4 I'm assuming that will be my arrival date. Is it possible for them to consider Jan 3 since it's only been an hour since midnight?

If I have my US passport and a printout of my itinerary from travelocity (without a ticket since I have an eticket) is that enough? What type of problems can I expect?

Thanks in advance!

They stamp for 30 days including the arrival and leaving day (even minutes past midnight in either case is a whole 'day')..

The stamp says 'admitted until' IIRC and thats the last day you can be in the country (up till midnight obviously).

It is just possible that the IO wont have reset his stamp if you arrive at 1 am so you must check it but he should stamp Jan 4th and you will be permitted to stay until 2nd Feb.

A bit 'iffy' though

One time, my flight from NRT arrived at Don Muang at about 23:00 -- I waited until after midnight to clear Thai Immigration hoping to get the extra day. The officer smiled and said NO -- the date stamped is the date your plane LANDED.

Going the other way I once went out on the last day but my plane had been rescheduled from say 23:45 to 00:15 the following day. Though no charge, they did insist in putting th overstay stamp in my passport even though I was clearing immigration before midnight.

my 14 year old son will be arriving 24/12 and departing 26/1 on australian pp. Do we have to get visa extension and will he be fined if he does not have extension for overstay?

You do not say what visa he has. However, regardless of his type of visa he will not need to get an extension of stay because if it is a tourist visa he gets permission to stay for 60 days, if it is a non-O visa he gets 90 days.

He will not have a visa and will be 30 days on arrival and will be with mother thai pp.

Without a confirmed onward ticket out of Thailand within 30 days from arrival the airline may not allow him to board.

If he manages to get to Thailand without a visa just the same, he should apply for a 7-day extension of stay to avoid an overstay fine.
