Just wanted to know if anyone knew if I can get a single entry or multiple entry permit on a 60-day tourist visa I received. I have the visa, but its not stamped yet. Thanks so much!

You receive a single 30 or 60 day permitted to stay stamp upon entry into Thailand (depending on your passport). The visa stamp you have now says if it is single entry or 2 or 3 entry. If the visa allows more than one entry you do the same entry procedure to obtain another permitted to stay stamp.

As you say you have the visa and it doesn't say that it is a 1, 2 or 3 entry (no such thing as a multi). Can only assume it is a single entry.

So on entry to Thailand you will be given either 60 days or 30 days depending on your nationality. If you wish to exit Thailand and re-enter again before your permission to stay has expired you can apply for a re-entry permit at an immigration office in Thailand which will allow you to leave and not cancel your visa. When you re-enter you will reactivate your permission to stay that you received on your original entry.

so - with a 60 day tourist visa issued in australia currently free - plus admin). can I get a re-entry stamp on it if a I go to Ankhor for a couple of days.

Yes you can obtain a re-entry permit from local immigration office to protect your original permission to stay . Fee 1,000 baht for single entry.

Yes that is nearly correct, the re-entry permit keeps the permission to stay alive as if you had not left the country, it doesn't add days, so in your example of 5 days in Ankor you will actually return with 45 days on your stay.

You get your re-entry permit from your local immigration office BEFORE leaving the country, 1000 Baht for a single, 3800 for a multi.
