One of the US Embassy Marine guards recommended a new fancy hotel (can't remember the name) as a good watering hole. When the young lady bartender set up my beer, she also brought along a winelass full of fried cashews. They were large, nice ,crispy, tender and delicious! I've had fried cashews all over Thailand and none came close to these. Communicating with that young lady bartender was a bit difficult as she would retreat as far away from me as the back-bar would allow, then stand looking terrified. When I finally coaxed her into a conversation, she told me that the cashews were from the Mon State. I believe that's on the Thai border. One person suggested that the reason the cashews were so delicious was because they had been fried in lard. I'm not sure .. but would still prefer them. (Isn't bacon fried in some version of lard? ) So I'm wondering how difficult it might be to bring these things across the river and at what cost/kg? I'm not thinking about growing them just processing them.
