Fruit Bread (eg Banana, Papaya)

From following a few papaya ideas spured by the beef thread I stumbled on this idea for Papaya Bread, I reproduce the recipe below with credits to the original author's URL.

Papaya Bread (Cramp Free)

adapted from Astray Recipes

1 cup sugar

1/2 cup butter

2 eggs

1 cup mashed ripe Papaya

1/4 cup chopped walnuts

1/2 cup raisins

1 1/2 cup flour

1/4 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp allspice

1/2 tsp ground ginger

1. Cream sugar with butter until light.

2. Add eggs and beat until fluffy.

3. Mix in Papaya, nuts and raisins.

4. Whisk together the flour, baking powder, salt, cinnamon, allspice and ginger. Add this to the butter mixture.

5. Pour batter into greased loaf pan. Bake at 325F for 1 hour 10 minutes.

Thinking about this a little more all that sugar and fat would probably be too hot in Thailand, why have cake when you have the fresh fruit?

Maybe I should be thinking papaya ice cream, where did I put the ice cream maker....

I'm sure papaya ice cream would be yummy! :o
