Aboslutely. Windows 2000 was designed as a workstation/light server operating system. So it has very good support for 2 processors (back when it was released you could only buy single core dual socket setups to get two processors-but the principle is the same). IIRC, you do have to instruct Windows to use a multiprocessor HAL after installing your new processor to take advantage of it, but untill you do your machine will run fine.
