I am quite a regular visitor as I just love fresh white fish. I am no connoisseur so I'm curious if anyone knows if the fish are indeed fresh? subseasteve Posted September 1, 2008 Share Posted September 1, 2008 Just check the eyes, they should be reasonably clear, usually when they are going off they get a pink or orange milky tinge in the eyes, but if you have a Thai missus she should tell you that super market fish are never fresh, tesco carrefour and the likes, better to go down the sea front markets. With the live fish pick the ones with the darkest colours, the lighter ones have probably been in the plastic tub for some days. Shell fish ie mussels and clams should be open, yet close when you touch them, and when cooked they should open. Squid should be clear and not murky white.
