September 16, 200817 yr The bottle of "Wine Sauerkraut" which I bought in Foodland says to store in the fridge after opening, then consume within 12 days. Is that true? I surely can't consume all of it that soon as I live alone with an occasional visitor. Is there a way I can preserve all of it without spoiling? p.s. It's pretty good stuff for my taste. September 17, 200817 yr Sauerkraut does not hold up well to the freezing process and looses flavor---------so I'm told If it's just plain kraut it is made by the fermenting process and it should keep well in a tightly closed container in the fridge for 2 or 3 months. Just like pickles, they stay good for a long time.
