I am looking for Graham Crackers in the Chiang Rai area. I could use butter cookies but I would rather not if possible. Thank you for the help. Enjoy.

You can make your own graham cracker if you really want to use them and can't find any in Chiang Rai. They aren't hard to make, even in a countertop oven.

Graham Crackers

4 cups whole wheat flour

1 cup butter

1 cup raw sugar

1 teaspoon baking soda

1 teaspoon cream of tartar

1 each egg, lightly beaten

½ cup hot water, approximately

1. Preheat oven to 350°

2. Place the whole wheat flour in a bowl. Cut in the butter until mixture is a consistency of coarse oatmeal. Add sugar, baking soda, cream of tartar, egg, and enough hot water to make a dough that can be rolled like a pastry.

3. Roll out the dough to 1/8 to 1/4 inch thickness on a flour covered pastry cloth board (use unbleached flour for rolling). Cut into 3 inch squares. Place on ungreased baking sheet.

4. Bake 15 to 20 minutes until done. Cool on a rack.

Makes about 2 dozen crackers.
