I searched but could not find an answer to this, maybe because I don't know all the terminology:

I read some time ago on this forum that it is possible to pay Immigration to extend the 30-day entry permit [or visa or whatever it is officially called] instead of do a visa run out and back in to the country. Did I read correctly? If yes, can I do this in Chiang Mai?

No, the most you would get is a 7 day extension for 1,900 baht. It is not sure they will give you the extension, unless you have a ticket out of the country within those 7 days.

On a tourist visa you can get a 30 day extension.

Note that under new rules you now get only 15 days if you enter thailand without a visa at a land border.
