Visa To Go With Partner To Who Has A Non Imm. B

Hi there I am a 26 year old man fro Australia.

My partner of 2 1/2 years and I are both Australian Citizens.

We have just moved to Koh Samui as she has a job working at a health spa.

She entered on a non immigrant B visa, I entered on a 60 day tourist visa.

does anyone know what I can apply for from here to allow me to stay with her?

You can not. Thailand only accepts marriage. And that would require her to have one year extension of stay. You can get more tourist visas or make 15 day border runs. If you want to study Thai that would open a new avenue but not sure of schools in that area.
