I've had enough of thai 'bread' it never seems to fulfil me in the same way bread from back home does so I want to try to make my own...

I've got a little electric oven but I don't know if that will do the job, I@m happy enough kneading the dough myself so a breadmaker is neither needed nor desired.

Does anybody here use their little electric oven to bake bread?

We managed to make baquettes and rolls - never tried an entire loaf. It took several tries as the temperature control and heat distribution is way off. We have to turn the tray around halfway through cooking or one side gets burnt. Its worth experimenting - the successes we did have were very edible :)

Where did you buy your yeast from? Is it available in a regular Tops supermarket or Central? It's so cheap to buy over the internet and I would imagine yeast being stupidly expensive - perhaps in the league of Heinz baked beans or Walkers salt & vinegar crisps...

We live in Chiang Mai and buy all our baking supplies from a shop called Peuen Krua (Kitchen Friend). If you're in BK, I would think you could find yeast at the supermarkets, especially those in more "farangey" areas. Good luck with the baking

I buy my yeast in Tops or Tescos, I have seen it in just about every supermarket in Bangkok. I use the Fermipan instant yeast and don't remember it being expensive. I used it today to make some French bread that came out very well indeed.

No, I have a 60cm wide Electrolux oven I bought from HomePro. I built my own kitchen cabinet to put it in and it's been in non stop use ever since baking bread, cookies and cakes!

Well, I tried, and failed!!

The bread was rock hard and as heavy as a brick!

Tasted pretty bland too...

I think perhaps the flour I used was crap and the yeast was not fresh, or even new, or even of good quality when it was fresh...

Any guidance would be appreciated, I know breadmaking is something that needs perseverance but here in Thailand I can't trust the consistency of the ingredients, what I mean is, if I was in the UK and was following a recipe for making bread I could buy all of the branded ingredients from Tesco/Sainsburys etc but here I'm left with one choice of yeast, in a brown bottle, not stating whether it's active/rapid(or whatever) And also, the flour was called 'bread flower' and that's the only thing in English language on the bag, I'm thinking it was a thai flour...

I saw a Hovis bread mix, it was about B115 in Tops, BUT the instructions were covered in a Tops un-removable label :) but would this have been better? Was it my oven? Perhaps my oven got too hot, perhaps the temperature guage on my little oven is inconsistent too??

Some guidance, please :D

My bread making in Thailand has been going very well, I made some very nice French bread last week using standard Thai bought ingredients. As for ingredients I use White Swan brand bread flour because it's cheap in Makro and Fermipan instant yeast. I was worried about the ingredients here as the Thai bread is pretty awful but the first loaf I made was just as good as anything I made before moving here.

Perhaps you could post your recipe and technique? I rarely find that any recipe works from the book without some modifications. If this is your first time trying to make bread don't be put off, it does take a few attempts before you will get the hang of it.

This is my first time so I will have to persevere!

I'll get some better ingredients and try again :)
