You can only get a 60 day tourist visa.

This can be extended with 30 days at immigrations in Thailand.

No ducumentation for tourist visa.

And this visa can only be had outside of Thailand, apply at a Thai embassy or consulate. They are free. No documentation needed.

Once you are in Thailand without a visa (on the 30 day visa exempt stamp) you cannot change to a tourist visa. You will have to leave Thailand to get one.

There are also double and triple entry tourist visas, depending where you are. With a double entry you can enter the kingdom two times during a 180 day-period, each stay not exceeding 60 days. With one of these, you can also apply for 30-day extensions in Thailand

Believe you are already here. As said, you can obtain a free single entry tourist visa at neighbouring consulate giving 60 day permission to stay on entry, and can extend for a further 30 days at Thai immigration. Or, if you want to stay longer, consider obtaining a free double entry tourist visa from Vientiane (Laos). With extensions and a border run in the middle, that would give you nearly 6 months stay. Extensions cost 1,900 baht a time.

Why not with each of them?

You can hold one type of tourist visa at the time

That is true, but if you hold a double entry tourist visa you can make two entries into the Kingdom and you can also apply for a 30 day extension on each of those entries. The advantage is you don't need to go back to the consulate for a new visa once the first entry (and extension) has been used; just do a border run to activate the second entry.
