I am looking to get a Single Entry (but I'll apply for multiple, I'll take whatever I can get) Visa at Phnom Penh. I volunteer with Population and Community Development Association teaching english to the Students. I also study Thai at the Walen Language Institute, but since I've only signed up for 30 lessons I can't get a Student Visa. However, should I include this in my visa letter somehow? I don't want to spend the extra money on a plane ticket-is there a bus that goes there? How long would that take? But the bottom line is; is it worth it?

A Tourist Visa gives 60 days.

You need a Work Permit to teach English in Thailand.

You cannot get a Work Permit with a Tourist Visa.

You would be working illegally without a Work Permit as you already know.
