All the fowl you listed other then the black swans are very common and you should be able to find some by either driving around or asking the people at the feed stores in your area. Chatta Jak weekend market in BK would be your best bet to look for the black swans, there again ask around the shops that are selling fowl but first try to find out the Thai name for black swans. Good luck and let us know if you are able to find what you are looking for.

we have 9 black swans in our moobahn, if i remember correctly they were very expensive like 30k each... but we started with 4... and everyone hates them, dam_n nasty animals... :) quail is available, duck, chicken... never seen turkeys come to think of it, other than the frozen variety, but i have been told they exist.

In the water fowl group Muscovy,Pekin, Indian Runners,Khaki Campbells and Chinese geese are the most popular here.

Chicken varieties are pretty short on the ground ,mainly because of the prevalence of Thai native chickens which cross with most other chickens that are brought in, Pure Chinese Silkies are to be found.

Most commercial chickens are a Plymouth or Barred Rock cross.

It sounds like you want a menagerie of duck and fowl, remember that birds have a pecking order ,geese in particular are pretty anti social and will belt <deleted> out of any other birds they can corner , but they are great "watchdogs". We have seven Chinese Geese and they recently killed my only Pekin drake, always keep small children away from geese.

Quail and pheasants are available but unless they are caged they have to be "grounded " by removal of their wing tips, this is done with a red hot knife blade to cut through the last joint and cauterise the wound, only one wing needs to be done to make them flightless.
