If you have a Tourist Visa you can extend for 30 days at Immigration.

If you only have a 30 day entry stamp you can bus to Cambodia and get 15 days when you return.

You will get 30 days if you return by air.

You can always apply for a Tourist Visa at a Thai Consulate in a neighbouring country.

The 30 day you got at the airport is not a tourist visa, it is a visa exempt entry. You got the 30 days at the airport because you didn't have a visa and at max. you can get an extra 7 days, but would probably be asked to show a ticket out of Thailand within those 7 days.

As said, if you leave and return by bus you will get 15 days, if you return by air it will be 30 days. If you need more, you can go to Vientiane and apply for a tourist visa and get 60 days or even a double entry tourist visa. A tourist visa can be extended by 30 days.
